These Cauliflower Rice Egg Frittatas are a quick and easy recipe with only a few ingredients you can have for breakfast or as a snack. The recipe combines cauliflower rice, egg, turmeric, onions, chili and black pepper, to make a tasty frittata with anti inflammatory benefits. The combination of turmeric and black pepper is not only tasty, it will also improve turmeric’s bio availability to the body. This recipe will suit those on Paleo, Vegetarian and Low carb diets. You can top this cauliflower frittata with avocado. Serving your frittata with avocado will ensure you get all the good fats with your low carb meal.
Cauliflower Rice Egg Frittatas Recipe
- 1 egg
- 5 tablespoons cauliflower rice
- half a tablespoon diced onion
- quarter teaspoon turmeric
- black pepper (amount according to your preference)
- dried chili (amount based on your preference)
- 1 or 2 tablespoons cooking oil of choice
- salt to taste
Place 1 egg with all the other ingredients in a bowl and mix very well.
In a pan at medium warm up your cooking oil without letting it get too hot.
Using a large spoon scoop and pour the mix into the hot oil in portions of 3 or 4 at a time, depending on the size of the pan you’re using
Cook for about a minute each side or cook until it gets crispy round the edges of the bottom side before turning the frittata over to cook on the other side, until golden brown
Once the frittatas are done you can have them topped with avocado and chili for a healthy low carb and high fat snack or you can have them as a meal with sides of your choice.
