Carrots Zucchini Egg Drop Soup
In this Carrots Zucchini Egg Drop Soup, bone broth has been used as a base for the soup. The combination of bone broth, eggs, seasonings with some crunchy vegetables makes a delicious soup, that is good for you.
If you have bone broth handy this recipe can make a quick and easy meal in a few minutes. Because bone broth naturally thickens you won’t need to add thickeners to this soup. The zucchini and carrots in this recipe are raw and just warmed up by the hot soup poured over them, but you can saute them a bit if you want them cooked. The soup has also been seasoned with a dry herb mix of garlic, chili and thyme. You can easily change this up to your choice of mixed herb. You can top your soup with fried or boiled eggs.
Carrots Zucchini Egg Drop Soup Recipe
1 or 2 carrots, 1 small zucchini, small quantity other greens of choice or spring onions, 4 cups bone broth, 2 small eggs for dropping into the soup, 2 eggs to be boiled or fried, 1 teaspoon or a bit more herb mix with garlic and chili( or use any of choice), salt to taste.
Prepare your vegetables by shredding, shaving, using a julienne peeler or spiralize them. Set them aside ready for the soup.
Pour your bone broth into a pot and season with herbs and some salt and bring to a slow simmer or low boil at medium heat.
While the bone broth is cooking up to a simmer, break the 2 small eggs into a bowl and beat them very well.
Once the broth starts to simmer or boil add the beaten egg in small quantities at a time while beating the soup with a fork non stop until all the egg is in the soup.
Keep beating the soup very well with a fork until the soup starts to simmer again, to avoid large clumps of egg in your soup, or if you like a fine egg drop soup.
Simmer for a minute and beat well again before serving into your soup bowls. Quickly fry the eggs.
Serve your soup and add the vegetables then top with fried egg.
