Broccoli Cauliflower Coconut Milk Soup
This Broccoli Cauliflower Coconut Soup is a good and tasty way to get more of these simple vegetables into your diet in a different way. The soup is so easy to make with minimal ingredients and the end result is so creamy and tasty. Fried sweet potatoes and boiled eggs have also been added to make this soup into a full meal with all the macros in the bowl.
Broccoli Cauliflower Coconut Milk Soup Recipe
1 cup or more chopped carrots, 1 cup chopped brocoli, 1 cup chopped cauliflower, 1 cup broth or stock of choice(you can also use water instead), half a cup coconut milk, half a teaspoon sweet paprika, half a teaspoon dried mixed herbs, 3 tablespoons cooking oil of choice, salt to taste, 2 boiled eggs,1 medium to large whole sweet potato
First boil and cool a whole sweet potato. Just cut the sweet potato in the middle and cook in about a cup of water for about 15 to 20 minutes depending on size.
Leave it cool, then cut into cubes and fry the pieces in about a tablespoon or a bit more cooking oil, turning it at intervals until it gets evenly crispy all round.
While frying the sweet potato, start the soup in a seperate pan. Start by frying carrots in about 2 tablespoons of cooking oil, to bring out their sweetness, at medium heat. Cook for about 2 minutes until they start to lose their crunchiness.
Add the cauliflower and brocoli and mix. Cook for about a minute until they lose raw colour and add paprika and herbs.
Add the stock/broth or water and bring to a simmer. Once it starts to simmer add the coconut milk and also bring to a simmer. Lower the heat to your lowest setting and leave it simmer for about 3 to 4 minutes.
Towards the end of cooking boil the eggs to your preference.
Serve the soup topped with boiled eggs and fried sweet potatoes.
