This Black Pepper Sweet Potato Egg Salad is a quick and easy Paleo and Paleo Vegetarian Meal just using sweet potatoes and eggs with some seasoning and olive oil. This is a handy recipe if you want to have more ways to enjoy your sweet potatoes. It’s simple and a low budget meal which is tasty and filling. This meal is also minimal cooking effort meal as the only cooking involved is boiling the sweet potatoes and the eggs. You can also fry the eggs instead of boiling them which will take even less time. The seasoning used in this recipe is black pepper, dried chili and dried coriander leaf, but you can easily use any herb combinations of choice. You can also add on other salad dressings of choice.
The sweet potatoes used in this recipe are white with red skin. This variety of sweet potatoes is sweet. You can use purple sweet potatoes or use the less sweeter orange sweet potatoes. There are other different varieties with differing names from country to country. All tasty and good for you so go with what you have available.
Black Pepper Sweet Potato Egg Salad Recipe
2 medium to large sweet potatoes, 2 to 4 eggs, 2 tablespoons olive oil or other oil of choice, black pepper, dry coriander leaf or other herbs, chili if you like, fresh coriander leaf or other herb to garnish, salt to taste
Herbs and Seasonings Quantities up to you.
Wash the sweet potatoes with skin on and boil in about 1 and 1/2 half cups water at medium heat for about 20 to 25 minutes in a pot with a lid on.
Once they are done and you can easily put a knife or fork through them, take them off the heat and drain off the water so they are not cooking further while sitting in the hot water.
Leave them sit uncovered to cool down 10 minutes or more, until you can handle them without burning your hands.
While the sweet potatoes are cooling boil the eggs based on how runny you like your your yolks
Once the sweet potato is cooled down, peel the skin off easily by hand lifting off or use a knife to help you. Cut into cubes.
Drizzle olive oil. Season with dry herbs and toss the salad. Add the eggs and top with black pepper, salt and fresh herbs. Add on other dressings of choice.
