There is no bitterness in this sausage at all. Combining bitter gourd with sweet potato,grass fed beef, free range bacon makes a full well rounded and grounded flavour sausage, where all the flavours are just there working together and not competing to be the top one which hits you first.
PREPARING BITTER MELON FOR SAUSAGE
Cut it in the middle, Scoop out the inside part and grate the gourd.
Serve 2 to 4
200g ground beef/mince, 1 rasher free range bacon, about 3 tablespoons grated bitter melon, about 3 tablespoons grated sweet potato, 1 teaspoon chopped coriander, Salt and butter or coconut oil.
I didn’t use fresh coriander but one I preserved in coconut oil. This is just a way I preserve herbs I cook with. Chop them up, put them in a jar, add coconut oil and refrigerate ready for use and eliminating wastage of herbs going off quickly before use.
Mix the ingredients and shape into sausages. If you want a less gnarly looking, striving to look perfect sausage or just want to impress use baking paper to shape your sausage. It makes for a better shape, less food handling and easier than just by hand.
Add mix to baking paper in sausage form, fold sausage in baking paper and shape along and even curve mix for sausage look.
Put sausages in a lined baking tray. Grate butter on top or add coconut oil. Bake in the oven at medium heat for 20 to 25 mins
Enjoy with vegetables, salad or as part of a resistant starch rice meal, if rice agrees with you.
Just cooked and cooled rice.
Just melt a tablespoon of butter with a few sprigs of rosemary and chilli if you like. Mix with cooked and cooled rice.
