Basil Garlic Fried Pork Curry
Non Spicy Coconut Milk Pork Curry with Zucchini
This Basil Garlic Fried Pork Curry combines the flavors of basil, garlic, turmeric and lemon to make a non spicy curry meal suitable for Paleo, Keto and AIP eating protocols. The pork is mixed with salt and lemon juice, and then fried. The curry sauce is cooked separately, with baby zucchini added on, then fried pork added at the end of cooking.
Pork belly that has been sliced thinly has been used in this recipe, making this recipe quick to cook. If you buy your pork from the butchers you can ask them to slice it according to your preferred size. If you have a thicker cut of pork simply adjust the cooking time and cook it for longer.
Easy Recipe Adaptations
The good thing about curries is that they are so varied and easily adaptable. You can easily add on other flavors to this recipe. Black pepper would go well in this recipe to add more heat and the health benefits, if your diet protocol allows. You can also use bigger zucchini if you don’t have baby zucchini. In place of the basil garlic combinations you can try coriander and ginger as these two also work well together.
Basil Garlic Fried Pork Curry Recipe
2 to 4 servings
- 6 to 8 thinly sliced pork belly
- 3 baby zucchini or half a large zucchini, sliced
- half a cup coconut milk
- half a cup broth or stock of your choice
- 1 tablespoon lemon juice
- 1 teaspoon lime juice or lemon juice (for the sauce)
- 1 level teaspoon turmeric powder
- 1 teaspoon dried basil or just under a quarter cup fresh diced basil
- 1 teaspoon chopped garlic
- salt to taste
- 1 tablespoon cooking oil of choice
- fresh herbs to garnish (optional)
Mix the pork with 1 tablespoon lemon juice and sprinkle on some salt
Warm up the cooking oil in a pan at medium heat
Add the pork slices and fry until crispy and golden brown both sides, for about 6 to 8 minutes depending on the thickness of your meat.
When the pork is done take it off the pan and set it aside.
Add some garlic to the pan and fry for about a minute or until it starts to turn golden brown.
Add zucchini and basil and mix, then add 1 teaspoon lime juice and stock, then bring to a simmer.
Add coconut milk and leave it cook for about 2 to 3 minutes, until the zucchini is cooked to your preference.
Taste and season with salt to your taste, and also add on other seasonings of your choice.
Add the pork and leave it cook for another minute or so and take it off the heat.
Leave the pork sit in the sauce for a few minutes before serving.
