Warming Up Batch Cooked Sweet Potatoes
Cooking your sweet potatoes in large batches and storing them in the fridge, handy and ready to go with meals, can save you a lot of cooking time when all you have time for, is preparing quick meals. If you’re not into warming your food in the microwave oven, there are a few ways you can warm up your sweet potatoes that will add on even more flavor. You could heat up your sweet potatoes by dicing them up and cooking in a sauce or a stew. You could also slice the sweet potatoes and fry them in coconut oil or other oil of choice. You could also warm the sweet potatoes by baking them in the oven as in this recipe. Warming the sweet potato by baking will make it even more sweeter and crispy around the edges.
Serving The Baked Sweet Potato Slices
You can serve the baked sweet potato slices with boiled egg and avocado, avocado by itself, other types of eggs, meat of your choice or even have the sweet potato slices as they are. You can enjoy these baked sweet potato slices as a snack or meal any time of the day.
Baked Sweet Potato Slices Recipe
1 or 2 Servings
- 1 large boiled sweet potato
- 1 tablespoon coconut oil, or butter, or other cooking oil of choice
- 2 eggs
- 1 avocado
- Black pepper
- Chili (optional)
Slice the sweet potato into about 1 cm thick slices, in quantities of your choice
Coat the slices in oil or butter spreading it all round
Lay the sweet potato slices over a baking paper in a baking tray
Bake the sweet potatoes in a preheated oven at 220 degrees celcius for about 20 minutes, turning them over to the other side after the first 10 minutes.
Once they are done switch off the oven and leave them sit in the oven until you’re ready to serve.
When you’re ready to serve, boil the eggs and serve with avocado, black pepper, salt, chili and other seasonings of choice
