Baking cauliflower with eggs and sausages makes a quick and easy meal with minimal effort. Cauliflower will take on the flavor of whatever herbs or spices you add on to it, so you can go spicy, savory or zesty depending on what spices you have. In this recipe I just stuck to salt, turmeric, paprika and a bit of coriander. This dish is flexible in terms of the quantities you make, as well as your seasonings. Just ensure that other things you add will cook within the eggs cooking time which is about up to 10 minutes for well done yolk. If you like your broccoli crispy add it to the top of your vegetable layers so it chars a bit.
Cauliflower Sausage Baked Eggs Recipe
Cauliflower rice, 1 or 2 sausages, 3 to 4 eggs, olive oil, salt, cup of broccoli cut into small bits, turmeric, black pepper, paprika, coriander( do herbs and spices of choice as well as prefered quantities), olive oil
Pan fry the sausages in cooking oil of choice for about 2 to 3 minutes so they partially cook. Let them cool then cut into small pieces.
Add about 2 tablespoons olive oil to the cauliflower, salt and all herbs and spices and mix them very well using your hands or fork. Transfer to a baking dish.
Coat the broccoli as well with some olive oil and salt and top the cauliflower. Add the sausages. Add more turmeric if you want more of the yellow color as well as the health benefits. You can also sprinkle fresh herbs over everything if you like.
Break in the eggs, and drizzle a bit of olive oil or other fat of choice.
Bake in a preheated oven at 220 degrees celcius for about 10 minutes, or until eggs are cooked to your preference.
