BACON CAPSICUM BAKED EGGS These Bacon and Capsicum Baked Eggs are made with coconut milk, capsicum and bacon. They make an easy meal which does not require much cooking for those times when you need an easy lazy breakfast or dinner, you can have with simple sauteed vegetables.
To make these easy baked eggs you’ll need the following
2 to 6
4 to 6 eggs, about 4 tablespoons coconut milk, 2 rashers or more diced bacon, half a diced onion, half or more diced capsicum, black pepper, salt, herbs of choice.
Beat the egg with the coconut milk, salt and pepper and pour into a greased baking dish. Drizzle a bit of oil on or grate on some butter.
Bake in a preheated oven at 220 degrees for about 5 minutes or until it starts to set then sprinkle on top the bacon, onion and capsicums. Bake for a further 10 minutes or until the eggs are done to your preference.
You can serve with veges or as it is for any meal.
