This salad is made using a combination of thinly slice red cabbage, red bell pepper and uripe avocado ribbons. The avocado ribbons are cut using a peeler. Unripe firm avocados are used in this recipe and they go very well with crunchy salad ingredients. This is a handy way to prepare avocados for your salads if you don’t want to wait for them to ripen. It’s also good for when you cut your avocado before it’s time only to find it’s still not yet ripe. This will easily salvage the situation of an unripe and open avocado, which can end up being thrown away because it’s not quite tasty as chunky raw avocado. Though if your salad will only do with a soft avocado you can also save the situation by baking the avocado or grilling it. The unripe avocado ribbons will provide a quicker alternative and they go very well with crunchy salads.
You will need any type of vegetable peeler for cutting the avocado.
Unripe Avocado Ribbons Salad
1 firm avocado, about 2 cups thinly sliced red cabbage, half a red bell pepper, 2 to 4 eggs, 1 lemon or 2 tablespoons apple cider vinegar, olive oil, salt, black pepper
Start off by preparing or slicing the cabbage and capsicum
Cut the avocado into half or quarters and use a vegetable peeler to cut ribbons along the avocado.
After cutting add apple cider vinegar or lemon juice all over the avocado.
Fry the eggs in cooking oil of choice
Mix the salad ingredients together and add salt, and into individual plates
Squeeze on some lemon juice or add a bit of apple cider vinegar.
Top with eggs and some olive oil over everything and black pepper
