This Asian Prawn Salad Nori Wrap combines crispy Asian salad greens, avocado and prawns, with a quick yoghurt dressing which you can substitute for mayonnaise if you have some or any other dressing within your eating protocol. The Nori wrap sheets were made simply by cutting a round shape on Nori sheets, using kitchen scissors. You can easily cut a lot of sheets in one go and have them handy and ready for whenever you want to wrap your ingredients of choice. Wrapping is quicker than making sushi rolls and also doesn’t require as much technique and equipment. In a wrap you can also easily omit rice and add more of other ingredients. Just add your ingredients and roll. Ingredient quantities can easily be varied to however many you are making.
Servings –4 rolls
4 Nori sheets cut to a round shape, Asian salad mix or any crunchy salad of choice, 1 avocado, 200g uncooked prawns, 2 tablespoons cooking oil of choice, 1 to 2 teaspoons mixed herbs of choice, black pepper, chili, (skip chili and black pepper if on AIP diet) salt, mayonnaise or salad dressing of choice within your diet protocol or make quick yoghurt dressing.
Quick Yoghurt Based Dressing
Mix 2 tablespoons coconut yoghurt with a tablespoon lemon juice or apple cider vinegar, a teaspoon honey or maple syrup, herbs and a bit of salt. Adjust to your taste.
Cook the prawns by frying in fat of choice for about 3 minutes until they start to turn pink. Add salt and all the herbs and spices of choice and toss through and take off the heat.
Prepare the nori sheet for serving by laying it on a plate shiny side at the bottom and the rough dull side facing up.
Wet your hands and pat the sheet with your wet hands so it rolls without breaking.
Add your salad ingredients, avocado slices and prawns. Add your salad dressing.
Take care not to overfill the ingredients so the roll is easy to handle.
Bring the two sides together one at a time rolling firmly and overlap them. The salad leaves will flatten, and moisture on the nori will stick the two sides together
