Apple Cinnamon Cauliflower Mix
1 cup riced cauliflower, 1 large diced apple, 1 crushed cinnamon stick, 2 tablespoons honey/sweetener of choice, 1 tablespoon butter
In a pan on the stove top melt the butter and add the apples and cook for about a minute, turning with a spoon. Add the cauliflower and crushed cinnamon stick and keep on turning for about another minute. Take it off the heat, add honey and let it cool. You can taste a bit and see if this mix has desert potential.
Apple Cinnamon Cauliflower Coconut Bread Recipe
The apple cinnamon cauliflower mix, 2 tablespoons coconut flour, 2 tablespoons shredded coconut, 1/4 (quarter) teaspoon bicarbonate soda, 1 lemon juice, 50 g butter, 3 eggs, 100 ml coconut milk, extra sweetener is optional as honey was added to cauliflower mix
Mix all the ingredients together except the eggs and the coconut milk. Mix very well into a smooth dough. Beat the eggs and add them to the mix. Mix very well. Add the coconut milk and mix. Transfer the mix onto a wide lined cake tray.
Bake in a preheated oven at 220 degrees for 25 to 30 minutes.
When it’s done take off the oven and off the baking tray and onto a cooling rack. You can brush on some butter at the top or not. Let it cool down. 30 to 40 minutes should be enough cooling time.
